Birch Syrup Recipes Cookbook
The Sweet Tree Story
My husband Jerry Entzminger and I started Diamond E Ranch in 1979. We bought 17 acres and decided we were going to become farmers. We had a young family, a lot of ambition and worked two full-time jobs. We now have 2000 acres with 600 acres in hay production.
Before the BSE hit the country, we ran 300 head of Simmental/Angus cow/calf pairs. After BSE, diversification became the key to our survival. We have a large stand of both Douglas Fir trees and Birch trees on our property, which prompted us to begin cutting rough cut Fir lumber and beams. We still run cattle but in smaller numbers.
One day, I decided to purchase a ticket for a Birch Tapping Workshop for my husband’s birthday. Sweet Tree Ventures was born as a result of that workshop. Jerry and I recognized that consumers and businesses were looking for BC products, especially something out of the ordinary. We think Sweet Tree Birch Syrup fits that category.
Sweet Tree Ventures has created a line of value added products incorporating our Birch Syrup. Our popular Birch BBQ Sauce and Birch Bark Toffee are two examples. We have a licensed kitchen where I create new products and experiment with Birch Syrup. I love to cook and bake new things so it seemed fitting to write a cookbook that would teach Sweet Tree customers how to use our products. In fact, many of the recipes were inspired by customers and their requests for access to recipes using Sweet Tree Birch Syrup!
I feel that Jerry and I are very lucky to have a family that participates in our endeavours. Birch Syrup has become part of all our lives. Even the illustrations in this cookbook were hand drawn by my granddaughter Annette Lisk.
Several very obliging BC Chefs generously provided recipes showing innovative ways of using our Birch Syrup. Our family and many friends also contributed to the cookbook and the recipes that it contains.
