BIRCH SYRUP FACTS
| The average birch tree produces 3 to 5 gallons of sap per day. It takes approximately 80 to 100 gallons to make one gallon of syrup. In contrast, maple syrup takes 40 gallons of sap to make one gallon of syrup. | |
| When the season is finished, after 2 - 3 weeks, the taps are removed and replaced with plugs which allow the tree to heal. | |
| Birch syrup contains fructose sugar which has a much lower melting point than the sucrose sugar found in maple syrup. The low melting point of fructose makes it harder to achieve a non-carmelized or burnt product. So while fructose is more difficult to work with, Sweet Tree uses fructose for stability and feels it creates a superior product.Fructose is also easily digested and is considered to be diabetic friendly. | |
